The Perfect Recipe for Summer June 03 2016

It is amazing the difference a week can make in regards to the weather, at least in New York.  The season and the calendar seem to be in sync this week with warm temperatures that really feel like summer!  The extra hours of sunshine mean there is more time to enjoy the great outdoors.  That also means we want to spend less time indoors cooking.  Here’s a quick and easy recipe from our friends at Due Cellucci Tomato Sauce.  Even better it will keep in your refrigerator for up to a week.

Saucy Gazpacho with Due Cellucci Tomato Basil Sauce

Makes 10-12 servings

Ingredients

2 cloves garlic, peeled

1 medium red onion, roughly chopped

4-6 ripe tomatoes, cored and quarted

2 carrots, cut into 1 inch cubes

2 red or yellow peppers, cored, seeded and roughly chopped

2 cucumbers, seeded, peeled and roughly chopped

1 jar Due Cellucci Tomato Basil Sauce

2 tablespoons Olive Oil

2 tablespoons red wine vinegar

Salt and Pepper to taste

Method

-In a food processor fitted with the steel blade or in a blender, puree the garlic, add the onion & tomatoes and puree until smooth. Place mixture in a large bowl.

-Puree the carrots and peppers to desired smoothness and add to the tomato mixture.

-Puree the cucumber to the desired smoothness and add to the other vegetables

-Add Due Cellucci Tomato Basil Sauce, oil and vinegar to the mixture. Season with salt & pepper to taste.

-Chill in refrigerator 4-8 hours or overnight.

-Garnish with yogurt or sour cream and chopped scallions or basil.
