Grandma Terry’s Potato Latkes with Jacobsen Salt Co. Kosher Salt

Makes 20 Latkes


4 large Idaho potatoes, coarsely grated

2 onions, coarsely chopped

2 eggs

2 tablespoons breadcrumbs

1 teaspoon cornstarch

1 tablespoon Jacobsen Salt Co. Kosher Salt

¼ teaspoon fresh ground pepper

Canola oil for frying


-Transfer potatoes to a large colander and squeeze out excess liquid. Combine potatoes, onions, egg, breadcrumbs, cornstarch, Jacobsen Salt Co. Kosher Salt,  & pepper. Mix well.

-Heat the oil in a large skillet over medium heat. Using a large slotted spoon, make oval shaped latkes and place into the oil, flattening with a spatula. Fry until very browned and crispy on both sides. Drain both sides well on paper towels.

-Enjoy with sour cream or apple sauce or both!
