Pumpkin Pie with Paul + Pippa Chocolate Biscuit Crust

Makes a 9-inch Pie

Ingredients:

Filling

1x 15oz can pumpkin

1 x 14oz can sweetened condensed milk

2 large eggs

½ teaspoon ground ginger

½ teaspoon nutmeg

½ teaspoon salt

Chocolate shavings

Crust

2 packages Paul + Pippa Cocoa Chip Biscuits, crushed

1/3 cup Sugar

6 tablespoons butter, melted

Method:

-Combine crushed biscuits, butter and sugar until well blended. Press into 9-inch pie pan.

Filling

-Preheat oven to 425°F. Whisk together pumpkin, sweetened condensed milk, eggs, spices and salt.  Pour into prepared crust. Bake for 15 minutes.

-Reduce heat to 350°F and continue baking for 35-40 minutes or until knife inserted into the center of the pie comes out clean.  Cool and garnish with chocolate shavings.
