Roasted Sweet Potatoes with La Boîte Ayala N.16 & Bee Local Portland Farmland Honey
Makes 6-8 servings
3 lbs sweet potatoes, peeled, quartered and cut into ½ inch slices
6 tablespoons FIVE Extra Virgin Olive Oil
2 tablespoons La Boîte Ayala N.16
1 tablespoon Bee Local Portland Farmland Honey
-Place sweet potatoes in a large saucepan and cover with water. Heat water to 160°F as registered on a thermometer. Cover and set aside for 1 hour.
-Meanwhile, adjust oven racks to upper middle and lower middle positions. Preheat to 400°F.
-Drain sweet potatoes and transfer to a large bowl. Toss with 3 tablespoons FIVE Extra Virgin Olive Oil and season with Jacobsen Salt Co. Kosher Salt and La Boîte Ayala N.16. Spread the potatoes onto 2 rimmed baking sheets and roast until bottom side is browned, about 30 minutes. Carefully flip potatoes with a spatula and roast until the second side is browned and potatoes are tender, about 20 more minutes.
-Transfer potatoes to a large bowl. Toss with remaining 6 tablespoons FIVE Extra Virgin Olive Oil and Bee Local Portland Farmland Honey
