Semolina Artisanal Pasta
Semolina Artisanal Pasta is one of the few(if not the only) organic pasta made in the USA. Founded by Leah Ferrazzani in October 2014 to create something she couldn’t find in the marketplace. The company has outgrown Leah’s laundry room and the pasta is now made in a commercial kitchen in the Lincoln Heights neighborhood in Los Angeles, California. The pasta is made using the finest Durum Semolina grown in the US. It is cut through bronze dies which allows a rougher texture on the outside that is perfect for connecting with a sauce. The pasta is dried at a temperature of 120° or below to preserve the natural flavor of the wheat.
I met Leah and her team at the Fancy Food Show in San Francisco. Once I tasted the pasta I knew that is was something I had to have. Then I heard their amazing story and I was placing an order! It is often difficult to pinpoint what makes a pasta unique. This one has a flavor beyond the stuff on your supermarket shelves and really makes me feel like I’ve gone back to Italy.
