Sufganiyot(Jelly Donuts) with Gus & Grey Jam

Makes 10-12 donuts

Ingredients:

1 scant tablespoon (1 package) dry yeast

4 tablespoons sugar

¾ cup lukewarm milk

2 ½ cups all-purpose flour

1 ½ teaspoons salt

1 teaspoon ground cinnamon

2 eggs, separated

2 tablespoons (¼ cup) butter, softened

Gus & Grey Fruit Jam

Sugar for dusting

Vegetable Oil for Deep Frying

Method:

-Mix together yeast milk and 2 tablespoons sugar. Let sit to make sure it bubbles.

-Sift the flour and mix with remaining 2 tablespoons sugar, salt and cinnamon. Add egg yolks and the yeast mixture.

-Knead the dough until it forms a ball.  Add the butter and continue to knead until the butter is well absorbed.  Cover with a towel and let rise overnight in the refrigerator. 

-Remove dough from the refrigerator and roll out until 1/4 of an inch thick.

-Cut dough into 12 rounds with a juice glass or cookie cutter approximately 2 inches in diameter. Let rise for about 30 minutes.

- Heat 2 inches of vegetable oil to 375°F. Drop the donuts in to the oil 4-5 at a time. Let brown on both sides and once removed place on a paper towel.

-Roll the donuts in sugar.  Poke a hole in the top and fill with Gus & Grey Jam.
